At Mercure Barossa Valley, we are working to embed sustainability into the day-to-day operation of the hotel while supporting the Barossa community and local tourism economy. Our focus is on reducing waste, improving energy and water efficiency, and using local suppliers wherever practical.

Amenities & Waste

Guest bathroom amenities are provided in large-format refillable dispensers rather than single-use miniatures, and other in-room plastics have been reduced where possible. Waste is separated into dedicated streams, glass, cans, cardboard and general waste, with guestroom recycling information helping guests sort correctly. In the kitchen, careful purchasing, portion control and menu planning help minimise food waste.

Sustainable Housekeeping

Guests are encouraged to support our sustainability efforts through responsible linen and towel use, with the option to opt in to room servicing during their stay. Laundry is managed to avoid unnecessary processing, reducing water, energy and chemical use.

Energy, Water & Getting Around

The hotel continues to improve hot water efficiency and has switched almost all lighting to LED. Guests can also access bicycles and e-bikes through a local hire partnership, a lower-impact way to explore the Barossa.

Our menu places a strong emphasis on Barossa and South Australian produce, including local wines and regional suppliers, with dishes designed for efficient ingredient use to help reduce waste. Takeaway packaging across the hotel is eco-friendly.

Events & Conferencing

Conference and event operations use reusable service ware and reusable water jugs rather than single-use plastics, with local food and beverage prioritised where suitable.

Mercure Barossa Valley is proud to support the Barossa community and regional visitor economy:

  • Partnerships with local wineries, food producers and tourism operators to showcase Barossa products and experiences.
  • Support for local events and tourism initiatives, including the Barossa Vintage Festival and regional industry activity.
  • Donated accommodation, vouchers and other in-kind support to local raffles, charities, sporting clubs and community organisations.
